A chocolate buttermilk layer cake filled with chocolate ganache and frosted with chocolate buttercream, built as a cylinder whose shape is said to suggest a French military cap. It was created at a grand capital-city restaurant shortly after the First World War, in honour of a visit by the French marshal it is named for, and is said to have been devised so as to be suitable for diabetics — the marshal being one.
