An unleavened flatbread baked on a domed metal griddle set over a fire. The dough is nothing but flour, water and salt; after resting it is divided into rounds, flattened, and stretched over a cushion until almost translucent, then flipped onto the hot dome. It comes off enormous and paper-thin, and is usually folded and bagged for sale — much larger and thinner than a pita. A tenth-century cookbook already describes it as large and paper-thin. Related breads off the same griddle run from a thicker village version to a honey-and-cinnamon sweetened snack and a savoury stuffed one.
