Small pieces of meat — pork, beef, mutton, lamb or chicken — threaded onto a skewer and grilled, in the manner of a shashlik or shish kebab. The meat is often alternated with bacon, sausage, or vegetables: onion, tomato, bell pepper, mushroom. It is seasoned with pepper, garlic, savory, rosemary, marjoram and bay. The name is a diminutive of the word for "skewer", which descends in turn from a Latin verb meaning to roast or fry — making it a distant cousin of the English word "fry".
