Rice boiled with far more water than usual until it turns soft, then beaten smooth and moulded by hand into sizeable balls. "Broken rice" — long grain snapped into shorter pieces — is what is normally used. The balls are dense and mild on their own, and arrive sitting in a bowl of soup, most often one built on groundnuts or on palm nuts, with meat or fish alongside. The name simply means "rice balls".
