A whole flatfish, skinned, dusted in flour and fried in butter, then finished with lemon juice, chopped parsley and a pour of very hot melted butter. The method's name means "in the style of the miller's wife" — the miller being the source of the flour that coats it. Dover sole is the classic choice, though megrim and lemon sole take the same treatment. Cooks differ on the details: soaking the fish in milk first or drying it thoroughly, clarified butter or ordinary, whole fish or fillets.
