Rice and beans cooked together until the grains take on the beans' colour, giving the speckled look the name describes — it means "spotted rooster". The beans simmer with garlic, oregano and onion, then go into day-old rice so the grains stay separate. Black beans in some regions, red silk beans in others, and a coconut-milk version on the coast. Eaten at any meal but above all at breakfast, alongside eggs, fried plantain, corn tortillas, fried cheese and soured cream. Two neighbouring nations both claim it as a national dish and have competed over it with record-breaking mass cook-offs.
