A steamed layered sweet: squares built from tapioca and rice flour set with coconut milk into as many as nine thin sheets stacked one on another, peeled apart and eaten a layer at a time. Subtly sweet, faintly oily from the coconut milk, smooth but sticky to the bite, and usually tinted green with pandan-leaf extract. Nine is the auspicious count — the word for "nine" is a homophone of the phrase "to step forward", so the sweet stands for advancement and prosperity, and is made for housewarmings, weddings and memorial rites.
