Beef, pork and bacon ground extremely fine into a smooth paste, packed into a bread tin and baked as a loaf until a dark, crunchy crust forms over a pale pink, springy interior. Despite its name translating literally as "liver-cheese", it traditionally contains neither — the "cheese" refers only to the loaf shape. It is eaten hot in a crusty roll with mustard or pickles, sliced finger-thick beside potato salad and a soft pretzel, pan-fried under a fried egg, or cold in thin slices on sandwiches. Variants fold in cheese, bell pepper and pickle, chilli, onion, or cubes of salami.
