Chopped chicken boiled into a broth with whole garlic, onion, ginger and a notoriously fiery green chilli, then simmered in a sauce of dark soy sauce, corn syrup, sugar and pepper. Shiitake, diced carrot and potato cook in over high heat; cellophane noodles, spinach, sliced cucumber and spring onion go in near the end with a little wheat flour to thicken. It is plated and scattered with sesame seed, in portions large enough that students and manual workers order it for the price. Market traders are widely credited with inventing it in the 1980s to hold their ground against the Western fried-chicken shops opening around them.
