A baked casserole of mixed vegetables layered with cubes of meat and cooked down in a tomato base until everything is tender. The meat is browned first with onion and garlic, sometimes with chopped chilli, then the assorted vegetables are stirred in along with crushed tomatoes, tomato paste and broth. Seasoned with salt, pepper and fresh coriander, the whole dish is transferred to an oven and baked until the surface turns golden brown. It is usually served with rice.
