Walnuts, dried fruit, lemon or mulberries are sometimes worked in, and a coin is occasionally hidden in the dough for luck. Shapes vary widely: decorated discs a foot across, plain dense triangles, or paper-thin sheets smeared with butter, rolled up like a carpet and cut into crisp layered spirals. Once baked in a clay pit oven, it is now oven-baked and eaten with tea or coffee.
